Chicken Loaf

1 4lb. chicken cooked tender and diced

2 cups dry bread crumbs

1 cup cooked rice

1 tsp. salt

1/2 tsp. paprika

1/4 cup chopped pimentos

2 Tbsp. chopped celery

2 Tbsp. chopped green pepper

4 beaten eggs

1/4 cup butter or chicken fat

3 cups chicken broth or milk

 

Dice chicken, combine ingredients in order and mix well. Pack into well-oiled baking dish (9×13″). Can be started in refrigerator until time for baking. Bake at 325* for about 1 hour. or until done by testing with a knife.
